Ginger-Garlic Salmon

Servings: 4

Ingredients

12 oz salmon fillet, in 4 3-oz pieces
2 tsp grated fresh ginger or Spice World Ground Ginger
2 large garlic cloves, sliced thinly
2 tbsp olive oil
2 tbsp lemon juice
1 tsp chopped chives
4 sprigs of fresh dill
pepper to taste

Instructions

  1. Preheat oven to 375. Use a little bit of the olive oil to coat the bottom of a glass pan.
  2. Put the salmon fillets in the glass pan. Spread 1/2 teaspoon of the ginger over each fillet. Drizzle the lemon juice over the fillets. Sprinkle the fillets with pepper if desired.
  3. Lay the garlic slices over the fillets. Sprinkle with the chives. Drizzle the remaining olive oil over the fillets (or spray on the olive oil with a Misto). Lay a sprig of fresh dill on each fillet.
  4. Bake in 375 degree oven for 20 minutes, or until salmon is cooked through and flakes easily.
