Building on my earlier success with the loaf version of my Banana Cheese Muffins, yesterday I used my last ripe banana to make this savory loaf, adding shredded carrots and zucchini for extra goodness.

Spicy Cheddar Banana Bread

Makes 2 small loaves

Ingredients

  • About 2 tsps butter or margarine for coating pans
  • About 1/4 cup old fashioned oats for coating pans
  • 1 over-ripe bananas
  • 1/2 cup unbleached all-purpose flour
  • 1 egg
  • 1/2 cup whole wheat flour
  • 1/2 cup milk
  • 1/2 cup oat flour
  • 1/4 cup fat-free plain greek yogurt
  • 1 tbsp low sodium baking powder
  • 1/2 zucchini, shredded
  • 2 small (or 1 large) carrots, shredded
  • 3 cloves garlic, chopped
  • 1/2 and 1/8 teaspoon ground Martiniquan hot pepper or Cayenne
  • 4 oz Emmi Emmentaler Cheese, grated
  • 4 oz Sharp Cheddar, cut in 1/2″ cubes
  • 1/4 cup unsalted pistachios

Instructions

  1. Preheat oven to 350. Grease 2 small loaf pans. Sprinkle 1/4 cup oats oats on bottom and sides of pans.

  2. Chop up garlic in food processor.
  3. Cut cheddar into 1/2″ cubes. Mix in half the garlic and 1/8 tsp hot pepper.

  4. Use food processor to shred carrots, zucchini, and emmentaler cheese.

  5. In large mixing bowl, mash the bananas.

  6. Stir in the all-purpose flour. Mix thoroughly.

  7. Mix in the egg.

  8. Stir in the whole wheat flour.

  9. Gradually stir in the milk.

  10. Stir in the oatmeal flour, the baking powder, and the 1/2 teaspoon hot pepper.

  11. Stir in the yogurt.

  12. Stir in the grated cheese, carrots, and zucchini. Mix well.

  13. Stir in the pistachios.

  14. Gently fold in the cubed cheddar.

  15. Fill the loaf pans with the batter.

  16. Bake at 350 for 45 to 55 minutes. Let cool before removing from pan.
