Building on my earlier success with the loaf version of my Banana Cheese Muffins, yesterday I used my last ripe banana to make this savory loaf, adding shredded carrots and zucchini for extra goodness.
Spicy Cheddar Banana Bread
Makes 2 small loaves
Ingredients
- About 2 tsps butter or margarine for coating pans
- About 1/4 cup old fashioned oats for coating pans
- 1 over-ripe bananas
- 1/2 cup unbleached all-purpose flour
- 1 egg
- 1/2 cup whole wheat flour
- 1/2 cup milk
- 1/2 cup oat flour
- 1/4 cup fat-free plain greek yogurt
- 1 tbsp low sodium baking powder
- 1/2 zucchini, shredded
- 2 small (or 1 large) carrots, shredded
- 3 cloves garlic, chopped
- 1/2 and 1/8 teaspoon ground Martiniquan hot pepper or Cayenne
- 4 oz Emmi Emmentaler Cheese, grated
- 4 oz Sharp Cheddar, cut in 1/2″ cubes
- 1/4 cup unsalted pistachios
Instructions
- Preheat oven to 350. Grease 2 small loaf pans. Sprinkle 1/4 cup oats oats on bottom and sides of pans.
- Chop up garlic in food processor.
- Cut cheddar into 1/2″ cubes. Mix in half the garlic and 1/8 tsp hot pepper.
- Use food processor to shred carrots, zucchini, and emmentaler cheese.
- In large mixing bowl, mash the bananas.
- Stir in the all-purpose flour. Mix thoroughly.
- Mix in the egg.
- Stir in the whole wheat flour.
- Gradually stir in the milk.
- Stir in the oatmeal flour, the baking powder, and the 1/2 teaspoon hot pepper.
- Stir in the yogurt.
- Stir in the grated cheese, carrots, and zucchini. Mix well.
- Stir in the pistachios.
- Gently fold in the cubed cheddar.
- Fill the loaf pans with the batter.
- Bake at 350 for 45 to 55 minutes. Let cool before removing from pan.
